Only For Potato or Cauliflower: Boil the vegetables till they are 80% done but not mushy (about 15mins) and let it cool before you mix the flours and spice.
Mix the spice mix (as per taste) with dry ingredients , yogurt and adjust salt and chilli powder as per taste before mixing vegetaables/chicken/paneer.
Add water in small quantity and mix till all pieces are well coated.
Rest for 15mins. 4 .On medium flame, heat oil. Fry the coated vegetables/chicken/paneer on medium flame only till they turn golden brown. 5 .Sprinkle lemon juice , fried green chillies, chat masala and fried curry leaves/spinach(optional) before you serve.
