Masala Bhaingan/Gutti Vankay
Ingredients
- Brinjals
- Tamarind
- Onion
- Oil
- Salt
- Curry Leaves
Optional
- Jaggery / Sugar (Optional)
- Ginger Garlic Paste (Optional)
Masala Ingredients: Chilli powder, Garam masala, Groundnut, Sesame, Coconut, Poppy seeds and Salt.
Method
- Put slits in the brinjals to stuff the fry powder.
- You can spray oil and air fry stuffed brinjals or keep them aside.
- Take a pan and in little oil, saute onions till they are transcluent
- Grind the sauted onions.
- In a pan, cook the stuffed brinjals in oil till they are about 80% done and keep them aside.
- Now put oil, jeera, curry leaves, grinded onion paste, ginger garlicpaste, Fry powder, tamarind and jaggery or sugar and let the gravy cook. Taste and adjust salt and chilli powder (stuffing powder already has chilli and salt, so adjust accordindly)
- Now put the cooked brinjals in the gravy and let it cook till oil seperates. Add water to adjust thickness.
